A delicate, light and fresh Rosé made to be drunk young, cold or at room temperature. On the nose the wine is fresh with slight notes of wild berry and wild flowers. It has a decent body, delicate, slightly acidic and slightly tannic in the mouth. Combine with cured meats or pastas that include a sauce with meat and vegetables or food with defined taste (think simple risottos or stuffed pasta).
Hand harvested in small baskets, macerated on the skins for 48-72 hours, spontaneous native yeast fermentation, traditional hand-crank press, aged eight months in large oak barrels, bottled unfiltered w/less than 50mg/l of total sulfur.
