Winemaking
The grapes are harvested by hand, when ripe, in order to obtain a balanced sugar/acidity ratio.
The Chenin and Chardonnay grape varieties are vinified separately, so that each retains its typical character during alcoholic fermentation. This takes place at low temperature (16°/17°) and takes place very slowly, which allows the aromas specific to each grape variety to be preserved. The Chenin undergoes a short aging in barrels.
In May (approximately 9 months later), we proceed to blend these 2 wines in equal proportion: the liveliness of the Chenin is balanced with the floral notes of the Chardonnay. Its fine foam comes from a second fermentation in the bottle after which it rests for 24 to 36 months on slats in the shade of our cellars. During the disgorgement, we do not add any expedition liqueur. This Bubble is therefore qualified as “gross nature” or “gross zero”.
Tasting
Beautiful pale yellow color, pretty aromas of yellow fruits, with a dominant green apple and a slightly brioche finish. A bubble of great finesse, where Chenin and Chardonnay sublimate. A wine of great elegance.
