Four friends and a passion for the good, for the beautiful and for the conscious. A project that wants to give voice to an area with an incredible vocation for the cultivation of vines, a place that is still almost uncontaminated, far from the frenzy of modern society.

We are in Amyndeo a small town at 650 meters above sea level, protected to the north by a mountain range rich in conifers and beech trees, where the rhythm of the days is still dictated by nature, with an enormous biodiversity and where the light has a forgotten clarity, where the sky is boundless, where the wind becomes the earth’s breath. Falling in love with this corner of the world was natural and a natural consequence was deepening the potential of this wine-growing terroir.

Bio fungicides: 3 x Sulphur dust, 2 x cupper dust, 1 *
lime/Sulphur spray, Nettle juice spray

Cover crops: Vetch, Barley and Mustard

Harvest: By hand in 20 kg containers

Yields /hectare: 10000 kg/ 70 hL

Harvest date: 2019 September 20-30

Vinification: Whole bunches pressed in basket press. Temperature controlled fermentation at 18-22 degrees Celsius. Low Sulphur use, no chemical additives. 2 nd fermentation in bottle. Sur latte for 18 months. Released 1 month after disgorgement.

The management of the vines is in a biodynamic regime and in the cellar spontaneous fermentation and non-interventionism are the guideline of careful vinification with which we try to best express the spontaneity of a story as old as it is current.

Tasting note: Rich but yet delicate nose, agrumes, resines, Mediterranean bush and stones. Mouth filling creamy mousse with everlasting tiny bubbles in perfect contrast with its refreshing acidity. Balanced. Considerable length. Cold climate wine.

The focus of Oinea is centered on Classic Method sparkling wines.

A boundless love for the joy that bubbles bring to every sip is linked to the place and the grapes. The very poor soils emphatize the typical characteristics of a grape, Xinomavro, which is the fulcrum of most of our wines. High acidity, low PH and depth of body and aromas lead to a choice that has become a necessity for us, to produce high quality sparkling wines.
