Tasty and meant for immediate enjoyment all summer long. We fermented Cabernet Franc gently, taking some liberty with traditional carbonic methods along with minimal intervention. Inspired by the wines of Chinon and Morgon but uniquely from California. Every decision from picking through bottling was designed to show off the beauty of cabernet franc. Oak free and medium in body, the wine is deceptively complex. Fresh roses, ripe and aromatic blackberry with notes of graphite and a hint of cool cedar. Easily paired with an array of food choices from simple green olives, lemon roasted chicken, a young Gouda, to mushroom filled Asian dumplings. We recommend cellar temperature or even slightly chilled for serving.
