ELABORATION
COLD PRE-MACERATION FOR 4 DAYS. ALCOHOLIC FERMENTATION WITH INDIGENOUS YEASTS AND CONTROLLED TEMPERATURE BETWEEN 18 AND 22 DEGREES. SELECTION TABLE. MACERATION FOR 30 DAYS. CRUSHING OF ALL THE GRAPE VARIETIES. MADE FROM 100% STEMMED GRAPES.
100 year old vines, granite and sandy soils, manual harvest, fermentation in French oak foudres, aged in French oak barrels, unfined/unfiltered.
Wine-making is carried out by hand. Grapes are manually harvested and the individual plots from each village are vinified separately. Vinification is carried out in a combination of stainless steel and open top wooden vats. The wines are aged in only lightly toasted French oak barrels and foudres, ranging in size between 500 and 3000 litres, to allow the full expression of the character of the grapes and terroirs. The wines are bottled unfiltered with minimal sulphur.
Perfect with tapas, charcuterie, composed salads and lighter meat dishes, lamb chops, chicken or couscous dishes.

Bodegas Jiménez-Landi is a modern winery boutique from Spain, in love with the nature and its fruits, fully respectful with the environment, and committed with the community. All the vineyards are 100% organic in balance with the local flora and landscape and personally supervised by the prestigious winemaker José B. Jiménez-Landi. The winery is pioneering in Spain in end-to-end product traceability, from the vineyard to the consumer.
The small estate is located in Méntrida and is in an old typical Toledana house where the oldest part, the cave, dates to the 16th century and was used by their ancestors to elaborate wine in clay vats. With romantic 16th century gardens, the estate has always been linked to the family, and the family always linked to winemaking and viticulture.
Bodegas Jiménez-Landi is now a modern boutique-winery belonging to the Spain ́s Appellation of Origin “DOP Méntrida-Toledo”, one of the oldest in the country. The winery produces limited number of artisan wines following organic agriculture applying innovation and technology.
The dark-skinned Bobal is probably the best known of the 3 grapes and adds color and good tannic structure - its home region is in Valencia, Spain. The lesser known Moravia, full name Moravia Agria, adds structure and grip and has a nice elegance. The third grape in the blend is a white grape: Albillo Real (primarily found in Ribera del Duero and the backbone of the Dominio Aguila Reserva Blanco) adds textural viscousness and density and lightens up Bobal's inky tendencies.
This wine is made as a collaboration with the owner of the vineyard and in homage to his father who took care of the vineyard all his life.
