Manual harvesting of the grapes which are de-stemmed, crushed and left to macerate for a couple of hours. So the flower must obtained is placed in a stainless steel tank at a controlled temperature. The aging of the wine will continue in stainless steel tanks until bottling, which usually takes place at the end of April or early May.
This wine is made by northern Italians who enjoy this with vast gastronomical variety of meals: from gnocchi and tagliatelle with hare sauce, to pork meat and grilled beef; from pasta and beans with pork rinds and prosciutto, to chicken, rabbit and roast duck. It’s a young wine, here in North Carolina it can go well with cured meats and cheeses enjoyed on a porch, or with bbq in your neighbors backyard.
Cherry pink color. Strawberry and raspberry scent with a full, fresh and lively flavor. Fermented in stainless steel.
