Visual Phase: White wine, clear appearance, light tears. Medium intensity (-) of a lemon color.
Olfactory Phase: Clean nose, medium intensity, with a presence of citrus fruit, lemon, mineral background with saline hints and Mediterranean herbs and spices.

Taste phase: The palate is dry, of medium acidity, with medium alcohol and medium body. In flavor it has a medium intensity with pleasant citrus nuances, a slight hint of aromatic herbs and a medium finish marked by the presence of spices very well integrated into the whole.

Olfactory Phase: Clean nose, medium intensity, with a presence of citrus fruit, lemon, mineral background with saline hints and Mediterranean herbs and spices.

Vinified unfined & unfiltered. All natural yeasts. Organic. A "natural" wine. Unoaked (6 mos in stainless steel).

Sopla Levante was born with the aim of valuing traditional varieties and emblematic vineyards that are disappearing, some of which we are currently the only ones in the world managing, these are micro-vineyards of almost extinct varieties, such as Gustico de Elche or Valencí Negre . They work in collaboration with the University of Valencia to determine varieties that still do not even have a name, and in the determination and study of minority varieties that have never had a leading role that they understand may be interesting today, such as Esclafagerre, Parrell, Forcallat, Crujidera. … And of course parcels of mythical vineyards that they have been acquiring of better-known varieties such as Bobal, Monastrell or Cariñena, in a pure commitment to express a terroir that they have fallen in love with.

Their challenge at Sopla Levante is to bring the simplicity of an unknown variety or a spectacularly unique terroir to its maximum expression. That is why their philosophy in this project is the development of microvinifications of very limited availability from each of their locations in a natural way, or failing that with minimal intervention. They do not add sulfites in our elaborations, and they use indigenous yeasts from within the vineyard itself, making a vat foot inside it that they later transfer to the winery to start the fermentation process of that plot. In their eagerness to innovate and extract the maximum expressive value of each wine, biological and oxidative and rancidity processes in demijohns.
