AN EXPRESSION OF STELLENBOSCH THROUGH AUTHORITY AND RICH TRADITION.

Situated on the South Easterly side of the Simonsberg Mountain with elevations 530m above sea level with mainly south-facing slopes, possessing some of the highest elevations in Stellenbosch. The high altitude and the rich red soils are ideal for premium quality wine grape production.

Through the understanding of our optimal climate and soil type, we have firmly entrenched ourselves as one of the leaders in Cabernet Sauvignon, placing Stellenbosch Cabernets firmly on the global wine map.

As we believe grape quality is the single most important factor in serious winemaking, our policy in one of minimum interference, allowing the wines to be a true expression of each vineyard.

Tasting Notes: This full-bodied wine was aged for 18 months in French oak barrels and shows ripe cassis and blackberry flavors, with the structure to mature over the next 10 years. Complex and stylish, with aromas of ripe blackcurrant, dark chocolate and pencil shavings. This wine is bone dry, yet exhibits a lovely sweet fruit character on the palate, with a lovely long finish.

Maturation: Already drinking well, and will develop further with age.

Food Pairing: A perfect accompaniment to grilled beef, especially with a Béarnaise sauce and rocket salad.

WINEMAKING PRACTICES
Yeasts: Alchemy 4
Method: De-stalked, hand sorting of berries, crushed, pumped into stainless steel tanks, 2 aerative pump-overs per day, pressed off once dry, racked to barrel for malolactic fermentation.
Wood: maturation 18 months in barrel. 40% new French oak, balance in older barrels.

Pruning: 2-bud spurs every 15cm
Yield: Approximately 9 tons per hectare
Irrigation: Supplementary drip
Vintage: A warm, dry vintage with a late start, resulted in smaller tonnage but yielding balanced, well structured wines with lovely intensity.
