to region. Nero D’Avola and Fiano from the hot dry Riverland and Nebbiolo from the blue slate soils of Polish Hill in the Clare Valley. Laura, chief winemaker and her husband, Brendan, are incredibly
passionate about the soil and produce in Australia. It’s their intent to showcase products to the rest of the world that embrace Australian native ingredients and pay homage to the indigenous custodianship who maintained the land for thousands of years. They seek Australian identity in the products they craft, and their hope is that these Australian stories can one-day be heard on a global scale. Unico Zello is part of the “New Australia” movement focusing on alternative varietals, sustainability, natural yeast, vegan friendly.
Affectionately known as ‘Truffle Hound’ – is our early-release, approachable and jovial expression of Barbera & Nebbiolo – we aim to retain the higher aromatics, herbal savouriness for its amaro-like refreshment.
Truffle Hound is a co-fermented blend of Barbera, Sangiovese, Nebbiolo, and Merlot from Australia's Clare Valley and offers up loads of savory notes which harmonize nicely with seductive cherry, pomegranate and eucalyptus on the mid-palate. The finish has an amaro-like spice/smoke kick and offers a silky texture and low ABV that conjures up great Pinot Noir. Serve with a slight chill for maximum enjoyment.
For those that favor meaty, gaminess over bright plum fruit. An exploration for umami-like refreshment. It presents with smoky, amaro-like liquorice and cardamom spice. Given drive by a lively and juicy palate-weight and pucker with a bright yet savory finish. – Unico Zelo
