Coming from families of winemakers, Céline and Laurent embarked on their own adventure in 2005 and developed to produce today 17 hectares of vines composed mainly of Chablis on the communes of Chichéé and Courgis, and Burgundy Chardonnay and Pinot Noir on the town of Chitry.

Located on the communes of Chichée and Courgis, our Chablis will charm you with its bright yellow dress, its aromas of white flowers, giving it a lively character, fruity and mineral at the same time. It will accompany you throughout the meal, from aperitif to dessert. Enjoy between 10 and 12°C now or in the next 10 years.

We wait until full ripening of the berries to harvest. The harvest is done by machine except for the creams that are harvested by hand. The pressing is done by means of pneumatic presses. The vinification is done in stainless steel vats thermoregulated for certain appellations, in order to preserve the natural aromas and perfumes, as well as freshness. We want to carry out, personally, all the work of the vine and the wine, until its commercialization.

High Environmental Value
At the end of 2019, we are pleased to announce, after having been audited, that we have reached level 3 of the High Environmental Value recognition.

In France, the High Environmental Value (HVE3) corresponds to the highest level of an environmental certification scheme for agricultural and wine-growing operations.

In this sense, it obliges farmers and winegrowers to respect practices according to a reference system that promotes the environment, and therefore to the development of products that are more respectful of nature than in so-called ``conventional`` agriculture.

It is based on 4 indicators:
biodiversity
fertilization of fertilizers
the phytosanitary strategy
water management

In practical terms, this HVE certification allows our winery to promote our products by using the HVE label and logo to stand out from others and increase our business development.
