100% Syrah
Thracian Valley, Bulgaria
The vineyard is situated on rolling hills in the Nikolaevo village area, East-Thracian Valley, Bulgaria.
At the foot of the Old Mountain at 300 m altitude, the grapes benefit from the cool air flow and good temperature amplitude between day and night during the ripening season. The soil under is mainly clay, mixed with gravel and limestone.
Winemaking
90 % of the grapes are de-stemmed and crushed, while 10 %
remain as whole bunches.
The process flows in stainless steel tanks, in small batches, punched-down only by hand, as fermentation is carried out by indigenous and selected yeasts. Ageing takes up to 10 months in 30% new and 70% old French oak 300 L barrels (hogsheads).
Not fined. Lightly filtered.
Tasting Notes
Vivid medium ruby color with purple hues. Floral violet notes and fresh black fruits, spices - black
pepper, licorice, eucalyptus and smoked meat, leather and tobacco on the nose. Medium body, very elegant with blackberries, black cherries, chocolate, vanilla, savory and meaty flavors and long juicy finish.
