This 40-year-old working family farm makes unpasteurized sheep’s milk cheese, olive oil and wine from fields they own on two sides of a valley. The place is an inspiring integration of man and nature.
Organic wine obtained from a blend of Chardonnay, Petit Manseng, Trebbiano, Semillon and Sauvignon Blanc grapes. All varieties grown by us in the coolest areas of the farm. The harvest is manual and takes place for Chardonnay, Semillon and Sauvignon Blanc in late August while, Trebbiano and Petit Manseng in the second part of September. The grapes are cooled before being pressed whole, the must decants for 24 hours before being decanted and fermentation started. Fermentation takes place between 15 ° C and 18 ° C, slowly to preserve the aromas. The wine obtained is then kept on the fine lees for 4-5 months, no malolactic fermentation.
The nose is gorgeous, with light notes of white flowers and lemon curd. It is intensely fruity, yet fresh and mineral.
Pair with roasted poultry and all types of seafood as well as an array of different cheeses.
