Melchiori, our passion for processing APPLES.
We are a local family of the Val di Non in Trentino.
Over the years we have been devoting our time and energy to processing apples.
Today our APPLE CIDER is the valuable result of great care in the selection of raw materials, deep expertise, and application of the most innovative, efficient and modern production processes.
We have been cultivating this passion for more than 10 years, in the beginning with Alberto and Lucia Maria, today with our cidermaker Matteo.
The fermentation of a blend from yellow apples leads to the production of this cider. Light and delicate, slightly sweet, simple but complete.
Asti Method
We select, grind, crumble, and press apples to extract the most precious element: the juice.
During apple-must fermentation we close the autoclave, so that the froth develops as a result of fermentation. That’s how the product becomes properly frizzy.
After filtration, we bottle apple cider.
With this method, we can produce light and frothing ciders, with a low alcoholic content, pleasantly drinkable and thirst-quenching.
Cider obtained from a mix of different varieties of apples, mainly red apples which, in addition to the color, give a slight acidity while keeping the product fragrant, sweet and flatterer, it will be appreciated by those who do not want it too.

great as aperitif. Pairs well with salads or light meals. Perfect with desserts.
